ingredients
2 1/3 cups dried split peas
7 cups water
2 medium carrots, cut into 3/8-inch dice
2 medium onions, cut into 3/8-inch dice
2 large celery ribs, cut into 3/8-inch dice
2 2/3 tablespoons chicken bouillon granules
1/3 teaspoon fresh-ground black pepper
1 teaspoon garlic powder
2 small bay leaves
salt, to taste
directions
Combine all ingredients except salt in a large, heavy saucepot (at least 3 quarts). Bring to a boil over medium-high heat, stirring frequently.
Reduce heat, cover and simmer vigorously 1 hour, stirring occasionally. Taste for seasoning and add salt if necessary.
Remember bouillon granules do contain a fair amount of sodium, so be sure to taste. Can be made ahead and reheated over medium-low heat. It keeps well refrigerated for up to 3 days. The soup thickens upon cooling; reheat before adding any additional water.
