Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
4 medium conch, pounded and chopped
2 onions, chopped
1/2 cup vegetable oil
salt and pepper, to taste
3 lemons, juiced
2 cans (28 ounce size) tomatoes, chopped
1 1/2 cup potatoes, peeled and chunked
4 stalks celery, cut into bite-size pieces
4 carrots, cut into bite-size pieces
2 cups water
1/4 teaspoon hot pepper sauce
2 cups sliced okra
2 bay leaves
1/2 teaspoon parsley
directions
In a large kettle, saute onions in oil until translucent.
Add salt and pepper. Add lemon juice, tomatoes and conch and increase heat. Add vegetables and rest of ingredients. Bring to a boil, then simmer for 3 hours. Remove bay leaves and serve.
