A multi-layer BLT turkey sandwich is a great way to use up holiday turkey leftovers.

3 slices white bread toasted
2 tablespoons mayonnaise
4 leaves iceberg lettuce
2 slices tomato cut 1/4 inch thick
3 slices bacon cooked crisp
4 ounces cooked turkey, sliced 1/8 inch thick
Spread 2 teaspoons of mayonnaise on one side of each slice of toast.
Place 2 lettuce leaves on the mayonnaise on one slice of toast. Top with the tomato slices and the bacon.
Place another slice of toast on top of the bacon, mayonnaise side up. Place the turkey on that slice of toast followed by the remaining lettuce. Place the remaining slice of toast mayonnaise side down on top of the lettuce.
Slice the sandwich in half on the diagonal using a serrated knife so as not to crush the toast. Cut the halves in half again to form quarters.
Serve immediately.
