Chocolate and Coffee Cannoli Duo

ingredients
4 cannoli shells
OR
4 miniature graham cracker crusts
Chocolate Filling
1 tablespoon sugar
1/2 teaspoon cinnamon
1 cup ricotta cheese
1 cup chopped milk chocolate
1/4 cup pistachios, chopped
Coffee Filling
1 teaspoon instant coffee
1 cup ricotta cheese
1 tablespoon sugar
1/2 cup hazelnuts, chopped
directions
For Chocolate Filling: In a medium bowl, combine sugar and cinnamon. Stir in ricotta, chocolate and pistachios. Cover and chill for 30 minutes.
For Coffee Filling: In a medium bowl, dissolve coffee in 1 teaspoon boiling water. Stir in sugar, ricotta and hazelnuts, mix well. Cover and chill for 30 minutes.
To fill cannoli shells: Spoon or pipe a filling into each shell or crust (Shells are available at Italian markets or in the specialty food section of most grocery stores). Serve immediately.

Cannoli always sounded like something hard to make but this recipe was a breeze! And talk about delicious! Served it at our Saturday morning coffee club when it was my turn for desserts. Handed out the recipe to everyone.
