Peanut Butter Jumbo Cookies

ingredients
2 1/2 cups flour
1 tablespoon baking powder
1 1/2 tablespoon baking soda
2 cups packed light brown sugar
1 cup vegetable shortening
1 cup peanut butter
2 large eggs
directions
Oven to 350 degrees F. Lightly grease cookie sheets.
Combine the flour, baking powder and baking soda. In a large bowl, beat together brown sugar, shortening, peanut butter and eggs. Gradually blend in dry ingredients, the dough will be very soft.
Using a serving spoon, drop the dough by spoonfuls 3 " apart onto the prepared sheets. Using the back of the spoon dipped in flour, spread the dough into large rounds.
Bake 10-12 minutes, until golden brown. Cool on cookie sheets on wire racks.
NOTE: Chunky peanut butter can be used for more crunch.
