Creamy Baked Onion Soup

ingredients
5 medium onions
5 tablespoons butter, melted
1 cup chicken broth
4 cups milk
2 tablespoons flour
1/2 cup water
salt

Preheat oven to 375 degrees F.
Peel onions. Cut into 1/8" slices, then into 1" long pieces. Put onions in 3 qt casserole with lid. Pour butter over and toss until coated. Cover tightly and bake for 3 hours.
Add chicken broth, stir well and bake for 1 more hour (covered). 10 minutes before last hour, put milk in saucepan and heat to almost boiling. Stir in the flour mixed with cold water and stir until thickened. Remove the casserole from the oven and stir in the milk.
Season to taste with salt and white pepper. Serve or let cool and refrigerate for up to 2 days.

I doctored this recipe a bit in an attempt to copycat one I had recently at a local restaurant. I pureed the onions after baking them and added lump crabmeat toward the end. The finished product was a big hit with my family!
