ingredients

1 package refrigerated pie crust
1 1/4 cup granulated sugar
2 tablespoons flour
1/8 teaspoon salt
1/2 cup water
1/4 cup melted butter
3 eggs
1 teaspoon grated lemon peel
1 lemon, peeled and sliced very thin

directions

In small mixing bowl, combine all filling ingredients except peeled lemon slices. Mix until well blended. Stir in lemon slices. Pour into pastry lined 8" pie pan.

Roll out remaining dough. See package instructions. Cut slits for steam to escape; moisten rim of bottom crust. Place top crust over filling. Fold edge under bottom crust, pressing to seal. Flute edge.

Bake at 400 degrees F for 30-35 minutes until golden brown. Chill before serving.
