ingredients
2 large eggs, separated
1 cup sugar
4 teaspoons flour
3 large eggs, separated
1 large lemon
1/8 teaspoon salt
1 cup milk
1 teaspoon melted butter
plain pastry dough for 9-inch pie
directions
Line a 9-inch pie pan with the plain pastry.
Beat the yolks until thick and lemony. Add the lemon juice and rind, sugar, salt, flour, butter and milk. Beat whites until they are stiff and fold in. Pour into the shell.
Bake at 450 degrees F for 10 minutes then reduce the heat to 350 degrees F and bake an additional 20 minutes.
