ingredients

1/2 cup sugar
2 tablespoons butter, melted
2 tablespoons flour
1/4 teaspoon salt
2 eggs, separated
2/3 cup milk
1 teaspoon grated lemon rind
1/4 cup lemon juice
1 unbaked pie shell (8-inch size)

directions

In a bowl, combine sugar, butter, flour, salt, yolks, milk, lemon rind, and juice. Beat egg whites until stiff and fold into lemon mixture.

Pour into pie shell. Bake at 350 degrees F for 30 minutes or until golden and firm to the touch. Cool.
