ingredients
2 packages firm tofu
2 packages Tofu Mates Vanilla Pudding Mix
3 limes, juice of (do not use the bottled lime juice)
1 package baked pie crust, graham cracker crust is okay
directions
Juice the limes. Grate a generous amount of the rind (reserve on a little dish).
Put tofu in food processor with lime juice. The goal here is to sub the lime juice for the little bit of water the pudding recipe calls for, adding water as needed to make the 1/4 cup total. Blend in processor until smooth.
Add one pudding mix and blend. Add second pudding mix and blend. Taste result, then add lime rind to taste
Pour result into pie crust, smooth and make pretty. Then refrigerate overnight.
