This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

Mini cupcake-sized key lime pies are the perfect party dessert, especially for people that just need to try everything. Beware, though, because you'll find yourself coming back for more of these once you've sampled the whole spread.

2 eggs
1 can (14 ounce size) sweetened condensed milk
1/3 cup key lime juice
6 mini graham cracker crusts
Preheat oven to 350 degrees F.
Beat eggs until thick and yellow. Mix in condensed milk until thick and creamy (1-2 minutes on low).
Add lime juice and mix for 30 seconds more. Add drop of green food coloring if desired.
Pour filling into mini graham cracker crusts and bake for 15 minutes. Cool for one hour and refrigerate until serving.

Great! One modification - add more lime juice - I'd say at least 1/2 cup - I used graham cracker crumbs and molded them into the large muffin cups - yummy!
