It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


5 tablespoons vegetable shortening
1 1/2 cup cake flour
2 tablespoons sugar
1/4 teaspoon salt
1 egg
3 tablespoons skim milk
FILLING
3 egg yolks
5 ounces key lime juice
2 cans sweetened condensed milk
1 cup whipped cream
PIE CRUST: Mix all ingredients by hand in a mixing bowl. Shape the dough into a ball. Roll dough out using a floured rolling pin and fit into a 9" pie plate. Prick with a fork around bottom and sides. Bake at 375 degrees F for 12-15 minutes until light brown.
FILLING: Mix egg yolks, lime juice, and condensed milk with an electric mixer until smooth and creamy. Pour into prebaked pie shell and bake for an additional 15 minutes. Allow pie to cool.
Serving Ideas: Garnish with fresh lime slices and whipped cream.
