Topless Slim Apple Pie

ingredients
1 (8-inch) prepared pastry pie shell
4 cups pared, cored, sliced, cooking apples
1/2 lemon, grated peel and juice of
1 tablespoon cornstarch
1 1/2 teaspoon ground cinnamon (or apple pie spice)
1 pinch salt
12 packets low-calorie sweetener (or to taste)
directions
Spray a deep-dish 8-inch glass pie pan with cooking spray, and line it with pastry. Mix apples lightly with remaining ingredients, except sweetener. using pie pan as a pattern, cut a circle of foil and place it over apple filling to prevent scorching (or invert another pan over filling).
Place pie on bottom shelf of preheated 425 degrees F oven and bake for 40 to 45 minutes, until apples are tender and crust lightly browned.
Remove pie from oven and sprinkle surface of apples evenly with sweetener (and additional cinnamon, if desired). Serve warm or chilled.
