It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

8 egg whites
2 cups sugar
1 tablespoon white vinegar
1 teaspoon vanilla extract
1/4 teaspoon salt
sliced strawberries
whipped cream
Beat the egg whites on high until soft peaks form. Reduce the speed to medium. Add the sugar, 2 tablespoons at a time, beating until stiff and glossy peaks form. Beat in the vinegar, vanilla and salt.
Spread into a greased 10 inch springform pan. Bake at 300 degrees F for 65-70 minutes or until lightly browned. Remove to a wire rack to cool. The meringue will fall.
Serve with strawberries and whipped cream. Store leftovers in the refrigerator.
