Pilgrim Pumpkin Cake

ingredients
1 package (18 ounce size) spice cake mix
1 can (15 ounce size) pumpkin
1 1/2 teaspoon baking soda
2 eggs, beaten
1/2 cup water
1/2 cup chopped walnuts or pecans, optional
Frosting
1 cup heavy whipping cream
1/4 cup brown sugar
1 teaspoon vanilla extract
1/2 teaspoon rum flavoring
directions
Heat oven to 350 degrees F. Grease a 9X13 baking pan and set aside.
Combine cake mix, pumpkin puree, baking soda, eggs, water and nuts (if using) in a large mixing bowl. Beat on low speed until thoroughly combined. Beat on medium speed for about 1 minute. Pour batter into prepared pan.
Bake 35 minutes, or until a toothpick inserted in the center comes out with just a few crumbs. Allow to cool copletely.
To make frosting: Combine heavy whipping cream, brown sugar, vanilla and rum flavoring in a mixing bowl. Beat until soft peaks form. Spread over cooked cake, and serve.
(If you wish, buttercream frosting may be substituted).

Wow! I made this cake for our quilting group, made up of ladies who are also very skilled bakers, and it was a huge hit! I was asked for the recipe! Moist, delicious, and very much a great cake for Fall! I did add extra nuts. Five Stars!
