These pancake-style egg roll wrappers are so simple to make you'll wonder why you've been buying store bought all this time!

4 eggs
1 1/2 cup all-purpose flour
2 cups water, more as needed
1 teaspoon salt
vegetable oil to coat pan
Beat eggs and water until foamy. Beat in flour gradually and stir in salt to make a thin, smooth batter.
Heat an 8 inch frying pan until hot with a light film of vegetable oil on bottom.
Pour in about 1/4 cup of batter and quickly shake pan to spread the batter out until a thin coating covers bottom of pan.
Bake until golden on underside, lift out very carefully onto a damp paper towel and repeat till all the batter is used.
