Thanksgiving Squash Casserole

ingredients
2 pounds yellow squash
2 eggs, slightly beaten
1/4 cup bell pepper, chopped fine
1/4 cup onion, chopped fine
1 cup mayonnaise
1 cup Parmesan cheese, grated
salt and pepper, to taste
Butter Crumbs
2 tablespoons melted butter
1/3 cup bread crumbs
directions
Slice squash, steam cook until tender, mash slightly. Beat eggs and add remaining ingredients - except butter crumbs.
Taste for seasoning. Put in buttered 2 quart casserole and bake at 350 degrees F for 30 minutes - then add buttered crumbs and bake until it browns.
BUTTERED CRUMBS: Mix in a bowl.

Took this recipe to a casserole supper & it was WELL received. I used butternut rather yellow squash & added 1 Tbs. horseradish sauce. I even liked it & I'm not too fond of squash.
