Thai Pineapple Noodle Salad

ingredients
1/2 pound thin noodles
1/2 pound shrimp
1/2 cup coconut cream
1/4 cup crushed pineapple
5 cloves garlic, peeled and chopped
2 tablespoons slivered fresh ginger root
Dressing
1/4 cup fresh lime juice
1/4 cup fish sauce
2 tablespoons sugar
Garnishes
slivered red bell pepper
lime slices
green onion slices
directions
Boil noodles for 3 minutes. Rinse noodles in cold water and drain.
Shell and devein shrimp. Quickly cook in coconut milk.
Arrange pineapple and all other ingredients along with noodles on a platter. Top with shrimp mixture.
Prepare dressing and pour over noodles. Garnish with peppers, lime and green onions.
