ingredients
1 1/2 cup flour
1/2 cup sugar
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1 egg, beaten
4 tablespoons butter or margarine, melted and cooled
1/2 cup milk
3/4 cup cooked and mashed pumpkin or squash
directions
Preheat the oven to 400 degrees F. Grease a muffin pan.
Sift the flour, sugar, salt, baking powder, cinnamon, nutmeg, and cloves into a large mixing bowl. Thoroughly mix the remaining ingredients in another bowl.
Stir the milk mixture into the dry ingredients until the dry ingredients are moistened. Do not beat.
Spoon into the prepared pan. Bake at 400 degrees F for approximately 20 minutes.
