Tasty Macaroni, Cheese, And Mashed Potato Casserole

This recipe merges two classics into one convenient casserole, offering both mac and cheese and fluffy mashed potatoes in every bite.

ingredients
1 box (7.25 ounce size) macaroni & cheese mix
2 teaspoons salt, divided
1 teaspoon dried oregano
1 teaspoon dried Italian seasoning
1 tablespoon oil
4 potatoes, peeled and cubed
2/3 cup diced onions
2 tablespoons butter
1 egg
1/2 cup milk
2 cups shredded Cheddar cheese, divided
directions
Preheat the oven to 350 degrees F.
Prepare the macaroni (without the cheese sauce mix) as directed on the package. Add half the salt, the oregano, and Italian seasoning. Set aside.
Heat a nonstick skillet over medium-high heat. Add the oil, potatoes, and onions. Cook, stirring frequently, until the potatoes and onions are soft. Season with remaining salt.
Remove the potatoes and onions to a bowl. Add the butter and mash the potatoes. Set aside.
Beat together the egg and milk. Add the cheese sauce mix and half the shredded cheese. Combine the cheese mixture with the cooked macaroni and mashed potatoes. Mix well then place in a baking dish. Sprinkle with the remaining shredded cheese.
Place the baking dish in the oven and bake at 350 degrees F for 10-15 minutes or until heated through and the cheese is melted.
