Brownsville Creamy Burrito Casserole

ingredients
1 pound ground beef or ground turkey
1/2 medium yellow onions, chopped
1 package taco seasoning mix
6 large flour tortillas
1 can refried beans
2 cups shredded taco cheese or cheddar cheese
1 can cream of mushroom soup
4 ounces sour cream
salsa, to taste
directions
Brown ground meat/turkey and onion; drain. Add taco seasoning and stir in refried beans. Mix soup and sour cream in a separate bowl.
Spread half the sour cream mixture in the bottom of a casserole dish. Tear up half the tortillas and spread over sour cream mixture. Put half the meat bean mixture over that. Add a layer of cheese. Spoon salsa over the cheese.
Repeat the layers, but leave out the salsa, with cheese over the top and bake, uncovered, at 350 degrees F for 20-30 minutes.

Tried this tonight and the family loved it. Something all the kids will eat !! The only thing I changed was the taco seasoning; I was out of taco seasoning but had a packet of fajita seasoning so I substituted that for the taco seasoning. I think it gave it bit more zing than the taco seasoning would have but I think it would have been just as good with either.

Very good recipe and so easy to make. I used a little salsa con queso in place of the first layer of cheese and then used the 2 cups of shredded cheese on the top. Came out GREAT! Definitely a keeper.

love this recipe, I added 1/2 cup salsa and a 1/2 enchilada sauce to the meat mixture to give it alittle spice.
