Good, homemade salsa makes such a difference over flavorless store-bought jars. Starting with ripe tomatoes is crucial, so if they're in season then you're on your way to a sensational fresh salsa. And a really easy one, thanks to the microwave.

3 medium tomatoes, chopped
1 green onion, sliced
2 cloves garlic, minced
3 tablespoons finely chopped green bell pepper or seeded jalapeno
1 tablespoon lemon juice
1 1/2 teaspoon minced fresh cilantro
1/2 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon black pepper
Combine all the ingredients in a microwave safe bowl. Mix well. Place in the microwave and cook on high heat for 45-60 seconds, or until heated through. Stir once during the cook time.
Let cool to room temperature and serve. Or, store in an airtight container in the refrigerator for up to 4 days.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Salsa with no jalapeno's??
You are welcome to add jalapenos if you'd like more kick to it. Not all salsa has jalapenos.
