Cajun Rice With Chicken Livers

ingredients
2 tablespoons vegetable oil
1/2 pound chicken livers
2 teaspoons salt, divided
4 tablespoons margarine
1 cup diced onion
1/2 green or red bell pepper, diced
1/4 pound diced mushrooms
1/2 pound diced cooked sausage (like kielbasa)
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon hot pepper sauce
6 tablespoons chopped fresh parsley
1 teaspoon black pepper
6 cups cooked rice
directions
In a large skillet, heat oil; saute chicken livers with 1/2 teaspoon of the salt until done (no pink should remain). Dice the cooked chicken livers and set aside.
In the same skillet, saute onion, bell pepper, and mushrooms in the margarine until soft. Add diced chicken livers and sausage. Add remaining ingredients to skillet and cook until warmed through.
