Grandma's Famous Bannock

ingredients
2 cups lukewarm water
2 teaspoons salt
2 tablespoons sugar
2 tablespoons vegetable oil
1 1/2 teaspoon instant yeast
6 1/2 cups flour
  vegetable oil, for frying

In a large bowl, combine the lukewarm water, salt, sugar, oil and yeast. Add the flour, mixing by hand when dough becomes stiff. 
 Turn dough out onto lightly floured surface. Knead for 10 minutes or until smooth and elastic. Let rise for 1 1/2 hours. 
 Punch down. Pat dough into 12- x 18-inch oblong. Cut into 2-inch wide strips. Cut strips into 2-inch squares. Flatten squares very gently with the palm of your hand. 
 In a large heavy fry pan, heat 1 inch of oil over high heat to 375 degrees F or until a small piece of dough floats. Fry until golden brown, about 5 minutes, turning bannock over halfway through frying. 
 Variations: Raisin Bannock: Add 1 cup of raisins with the flour. Cinnamon Bannock: Combine 1/2 cup packed brown sugar with 2 tablespoons cinnamon. With a knife, spread softened butter on warm cooked bannock and sprinkle with the sugar mixture.
