
Pressure Cooker Split Pea Soup

5 slices bacon, chopped
1 large onion, chopped
2 carrots, chopped
1 potato, peeled and finely chopped
1 cup green split peas, rinsed
2 1/2 cups vegetable or chicken stock
1 clove garlic, minced
1 bay leaf
salt and freshly ground black pepper, to taste
Set your pressure cooker or Instant Pot to saute mode. Add the bacon and cook, stirring frequently, until it the fat starts to render. Add the onion and cook, stirring frequently, until the onion is soft.
Add the carrots, potato, split peas, stock, garlic, bay leaf, salt, and pepper. Mix well.
Close and lock the lid and bring to pressure (high heat if using an older pressure cooker). Cook for 15 minutes once at pressure.
Use the natural release method when the timer is up.
Remove the bay leaf, stir the soup, then serve in individual bowls. Can garnish with chopped, cooked bacon or chopped, fresh parsley if desired.
