Ingredients: 1 pound alligator meat, finely chopped (can substitute ground pork, veal, or chicken) 1 egg 1 tablespoon minced onion 2 tablespoons diced celery 1 tablespoon chopped fresh parsley 2 tablespoons finely chopped shallots 2 teaspoons lemon pepper 1/2 teaspoon salt 1/4 cup bread crumbs flour as needed to dredge 1 cup cooking oil
Directions: Combine the alligator, egg, onion, celery, parsley, shallots, lemon pepper, salt, and bread crumbs in a bowl. Mix well to combine but don't overwork the meat. Form the mixture into 1-inch meatballs. Place the meatballs on a plate and chill in the refrigerator for one hour.
Heat the oil in a large skillet over medium-high heat. It should be about 350-360 degrees F.
Dredge the meatballs in flour, shaking off any excess. Place the meatballs in the skillet and cook, turning gently, until browned on all sides and cooked through. Cook the meatballs in batches if needed to keep from crowding them in the pan.
Remove the meatballs from the oil with a slotted spoon and let drain on paper toweling. Serve hot as an appetizer, or add to your favorite recipe calling for meatballs.
