Homemade Frozen French Fries

Ingredients:
potatoes, peeled or not
oil
optional seasoning

Directions:
Preheat the oven to 425 degrees F. Lightly grease a baking sheet.

Wash and dry the potatoes. Cut into fries or other shapes. Place the fries in a bowl. Drizzle the fries lightly with oil and any desired seasonings. Spread the fries out on the baking sheet. Place the baking sheet in the oven and bake until just done (they should be just barely done) about 20-35 minutes. The cooking time will depend on how thick you cut the fries.

Remove the baking sheet from the oven and let the fries cool on the baking sheet. When cooled to room temperature, put the baking sheet in the freezer, making sure to separate any fries stuck together. If you don't have room for the baking sheet in your freezer, transfer the fries to a smaller dish that can still hold them in a single layer.

Freeze the fries until solid and then transfer to a zip-top plastic bag. Press out any excess air and seal the bag.

When ready to cook the fries, preheat the oven to 425 degrees F. Grease a baking sheet or line with foil. Place the frozen fries on the baking sheet and bake until crisp and hot, about 20 minutes, stirring as needed. Again, cooking time will depend on the size of the fries.
