Ingredients: 1 unbaked 9 inch pie pastry 1/2 cup brown sugar 1 tablespoon flour 1/4 cup dark corn syrup 2 teaspoons pure vanilla extract 1 egg 1 cup water ***Topping*** 1 cup flour 1/2 cup brown sugar 1/4 teaspoon salt 1 1/2 teaspoon baking soda 1/2 teaspoon cream of tartar 1/2 stick butter or margarine
Directions: In a sauce pot, combine brown sugar, flour, corn syrup, egg and vanilla. Stir in cold water. Over medium heat stir constantly until mixture comes to a boil. Cook and stir a minute or two to thicken a bit.
Remove from heat and cool completely. When cold pour into an unbaked pie pastry. Mix the remaining topping ingredients until crumbly. Spread topping evenly over filling.
Bake at 350 degrees F until golden, about 40 to 45 minutes. Remove to rack to cool completely.
When completely cold, cut. The texture and the flavor of this pie is superior on the second day when the filling has firmed up and the flavors are blended. Serve pieces with a dollop of whipped cream or some ice cream.
NOTE: The pie tastes best on the second day. Pure, good quality vanilla extract is a must. The pie has a mildly sweet vanilla base and a sweeter topping and simple to prepare,; a pie very characteristic of Amish baking. Enjoy!
