
Mini Quiche Wedding Appetizers

2 batches pie crust dough
***filling of your choice for quiche***
bacon, cooked and crumbled
onion, finely chopped
shredded Swiss cheese
cooked ham, finely chopped
thinly sliced mushrooms (fresh or canned)
shredded Cheddar cheese
finely chopped cooked broccoli
crumbled feta cheese
cooked spinach, chopped

2 eggs, beaten
3/4 cup sour cream
Preheat oven to 375 degrees F.
Prepare the pie crust (use a homemade recipe or purchased). Roll it out and cut out circles using a biscuit cutter or a drinking glass. Place the cutout circles in the bottom of a mini muffin pan.
For the fillings, use any combination of the ingredients listed in any amount desired. Fill the quiche cups just to the lip of the crust, do not overfill.
In a small bowl, whisk together the beaten eggs and sour cream until smooth. Carefully spoon the egg mixture over the filling in the quiche cups. Add enough to cover the filling but not go above the lip of the crusts.
Bake the mini quiches for 20-25 minutes at 375 degrees F.
These can be frozen. Prepare and bake then freeze. Defrost and reheat for 10 minutes in a 400 degrees F oven. They are very easy to make and delicious!
