Fresh Gooseberry Or Green Grape Pie CDKitchen https://www.cdkitchen.com Serves/Makes: 8 | Ready In: 30-60 minutes
Ingredients: 1 package almond pastry for a 2-crust pie* 3 cups fresh gooseberries or green grapes 1 1/2 cup sugar 3 tablespoons quick-cooking tapioca 1/8 teaspoon salt 2 tablespoons butter or margarine
Directions: Crush 3/4 cup gooseberries (or grapes) and add to sugar, tapioca and salt. Stir in remaining berries. Cook and stir until mixture thickens.
Turn into pastry-lined 9-inch pie pan. Dot with butter. Adjust top crust and flute edges; cut vents. Brush with milk.
Bake at 425 degrees F for 35-45 minutes or until crust is golden brown. Serve slightly warm.
* Almond Pastry: Before adding water to blended flour and shortening when you are making the pastry, add 1 tsp. almond extract. Also good for peach or cherry pie.
