Cassoulet
The cassoulet is a classic French dish of white beans, sausage, pork or lamb (or mutton), and preserved duck or goose which is flavored with a bouquet garni or other herbs. It's named is derived from the "cassole d'Issel", the rustic looking, glazed earthernware dish that it is served in. The shape of the dish (wide, deep and flared at the top) helps to harmonize the flavors while it cooks very slowly in a low oven. The dish, and the meal, are from the Languedoc region in France.
