Oatmeal. It's what's for breakfast.

Today is National Oatmeal Day. Are you celebrating? We did. Of course, I'll use pretty much any excuse to test a recipe (and eat it).

Although, admittedly, we don't eat a lot of oatmeal here. It's not that we don't like it - we do - it's just a little carbier (is that a word?) than we consume on a regular basis. I don't do a lot of baking so we don't have oatmeal cookies very often. The giant container of oats in the pantry gets most used in meatloaf, I think.

Oatmeal for breakfast is a good thing, however. Studies have shown that it can lower your cholesterol. And eaten in moderation (and without too many sweet toppings or add-ins) can be a healthy choice since it will give you energy for the day ahead of you. If Brent is going to have an active day, I'll sometimes fix him some oatmeal instead of one of the lighter breakfasts I usually make.

And the bonus is, he likes oatmeal.

Now, of course, you can buy instant oatmeal that comes in all sorts of yummy flavors. And I'll admit to having some on hand for those morning oatmeal emergencies. My problem with them is that they contain preservatives and often more sugar carbs than you really need to have in there. And making oatmeal from scratch (not including the steel cut oats which have to cook much longer) is almost as fast as instant - making it a much wiser choice in my opinion.

A few weeks ago I made this one for Brent: Single Guy's Quick Oatmeal Breakfast.  Now, honestly, most single guys I know would probably think this is too much work and opt for the instant kind if they were going to go to the effort of even making breakfast.



The unique spin on this recipe is that it's made with apple juice instead of water or milk. The juice increases the sugar content but it was incredibly flavorful  

My favorite breakfast oatmeal recipe so far, which I didn't get a photo of (I was too busy gobbling it down), was for peach cobbler oatmeal. It truly tasted like peach cobbler. It calls for some wheat germ on top, which I couldn't find at the time, so I improvised and whirred some raw oats in the food processor to use in place of it. I also used vanilla yogurt with peaches in it to pump up the peachy flavor instead of regular vanilla yogurt. It was delicious!

And the recipe we celebrated with today is a pumpkin pie oatmeal - you know, since it's that time of year to put pumpkin in everything.



The flavors were subtle with just a hint of "pumpkin pie". I liked that it wasn't overly sweet and, in fact, the sweetness is up to you to control with the optional addition of honey. The recipe is for one serving - one very tiny serving. So feel free to double, or even triple it, for a heartier breakfast.

There you go, three delicious ways to start the day and celebrate National Oatmeal Day!
