This recipe was inspired by a show on the Travel Channel. They went through the 10 best pizza places in the US. I am a pizza fanatic, so you know I couldn't miss that show. The pizza I was most intrigued with was the Mac & Cheese Pizza. The original pizza on tv was just crust, pasta and cheese. I thought it needed a little something more, so I added some alfredo sauce and topped it with some bacon. It turned out great.

I'm guessing my pork belly macaroni and cheese recipe probably falls under "gourmet indulgence". But it doesn't have to. Pork belly is actually rather humble food. Because pork belly is bacon. Well, I mean it's the same cut of the pig. Bacon is cured and often smoked. But it starts out as pork belly. So it's hardly what you'd call eatin' high on the hog. Besides, you can make bacon, right? So you can make pork belly macaroni and cheese too.

But you're going to have to let it cool in the refrigerator for a while. It needs to be easy to handle. Because you're going to abuse it.

The beauty of this macaroni and cheese is that it is loaded with cauliflower and a minimal amount of cheese. Greek yogurt or low-fat sour cream keep this recipe low-fat, but still nice and creamy. This was inspired by my love of mushrooms. And I guess it reminded me of Swiss-mushroom burgers. Without the burger part.

This creamy, baked macaroni and cheese recipe does double duty as a side dish or a hearty meatless meal. The near-perfect flavor combination of goat cheese and sun-dried tomatoes combines perfectly with the creaminess of the melted fontina and the delicate onion flavor of the chives to make a fabulous variation on a classic casserole dish.
