Foodie Friday: Green Lite Bites

I've always been a bit fascinated with picky eaters. Let me rephrase that. I've always been a bit fascinated about WHY someone is a picky eater. What is it that turns them off from certain foods, or even whole groups of foods?
As I see it, there are two kinds of picky eaters: kids and grownups.
Some kids are picky while others aren't. Even kids in the same family, exposed to the same foods. I wasn't a picky eater at all but my brother was. It actually went beyond picky if you ask me. My mom would often fix two dinners - one for him, and one for the rest of us. Some foods would have to be cut a certain way, or served in a certain way. One of his rituals was being served a plethora of liquid choices: milk and juice and milk and water. Yes, that's how he said it. Yes, milk is listed twice. And yes, that's the order they had to be placed in front of him. All filled to the exact same level in the glasses
When she made him eggs for breakfast the egg white had to be separated from the yolk after it was cooked. Oh, he ate them both, they just couldn't be touching on the plate
Thankfully he grew out of his picky habits, like most kids do. But some don't. And they grow up to be the other kind of picky eaters.
Most of the grownup picky eaters I know aren't too bad. They simply find something they DO like whether it's on a restaurant menu or as a guest at someone's home. Or sometimes, they just suck it up and eat something they don't like. You often don't even realize that they are picky unless you ask them about the foods they do, and don't, like.
Then, there are others, who make their pickiness known. They pick out even the tiniest bits and pieces of the offending ingredient in whatever they are eating and place them in a pile on their plate. Or they crinkle up their face in disgust when offered a food they dislike instead of simply saying, "no thank you".
Thankfully I don't cook for picky eaters very often. Brent is far from picky. There are some foods he doesn't care for that much, but he'll usually still eat them without complaint
I have great respect for those that have to cook on a regular basis for one or more people that fall into one of the picky categories. Roni over at Green Lite Bites is just one of those people. The cook, that is, not the picky eater! She's not only got two cute young kids to cook for, but also a... you guessed it... picky husband.
And to top it off, she cooks healthy food
I was clicking around random blogs when I discovered hers. The post I saw was for cute little ham "cups" filled with scrambled eggs and asparagus. Since I'm always on the lookout for some new breakfast-y item to cook for Brent, I decided it had to be featured in this week's Foodie Friday.
The recipe is great for using up leftover veggies. You could very easily substitute any roasted or sauteed veggie in place of the asparagus. I actually bought and roasted asparagus just for the recipe. The bonus was that I also got to have a lovely asparagus salad for lunch :)
You've probably seen other recipes similar to the ham cups. You simply need to make a layer of something in a muffin tin that will hold the egg sufficiently. Ham works well because it will heat quickly and remain firm enough to remove from the tins when cooked.
The rest of the recipe is simple. Scramble the egg, place it and the asparagus in the ham cups, and bake.
16-18 minutes later your breakfast (or snack) is ready to go.

Even picky eaters should be happy with this recipe since you can tailor the add-ins to suit their tastes. Next time I'm going to try stirring in some crumbled bacon and topping it with some cheese
