Foodie Friday: Elle's New England Kitchen

I actually had a different blog on the schedule for this week's Foodie Friday. Long story, in part due to my procrastination (you know, my middle name), but I've had to postpone that one. But that's really quite ok. In fact, I think it worked out even better this way.
Why? Because I have a sick hubby this week. He's been in bed for a few days now. And when you are sick there is nothing more soothing than soup.
I'll tell you all about the soup in a minute, I promise.
First, I want to tell you about the wonderful blog where I found the soup for Mr. Sickie. The site is Elle's New England Kitchen. I feel I should add a disclaimer as well, I've been friends with Elle for a few years now. I met her on Twitter and have followed her blog for a while. She has this omg-amazing-you-have-to-try-i recipe for s'mores-meets-rice-krispies-treats. I realize I've probably lost 99% of my readers at this point while you checked out the decadent dessert. That's ok, I'll forgive you.
This once.
So, anyway, Elle is a pretty amazing cook. So when I saw she had a copycat recipe for Campbell's tomato soup I was intrigued. And I knew Mr. Sickie would looooove some homemade soup.
The soup is surprisingly easy. You pretty much just mix it all together. Yeah. Like I said, easy!
There is a secret ingredient that you stir in at the end though. Read the recipe, you'll understand. It makes all the difference. The soup is rich and velvetty.
I will say, I ate a huge bowl of this (because it makes a lot). And then when Brent got out of bed I told him I had homemade tomato soup. He said that sounded good
I gave him an equally huge bowl.
And he had seconds.
I packaged up the remaining leftovers and put them in the fridge.
And then I ran up to my office for 10 minutes. When I came back down, he informed me he'd eaten the leftovers as well.
Yeah, it's that good. And does it taste like its namesake? Yes, but only better
