Foodie Friday: Coconut & Lime

Would you believe that as a kid I never went on an Easter egg hunt? Not once. Every year for Easter we'd go to my Grandma's farm, not really for Easter per se, but rather because we had time off school so it was a good time to travel.

There was always a big dinner for Easter, with various other relatives joining us. And candy. Lots of candy. I was partial to the chocolate covered marshmallow bunnies. And Peeps. Yeah, I said it.

And we always colored eggs. Usually we used one of those cheesy dye kits from the '70's. The eggs never looked as good as the ones on the package, but it was still fun. The kits they have now are amazing compared to what we used back then. You know, in the "old days". Now they have kits that have everything from glitter to sports themes  

And for as much fun and part of our family tradition that the process of coloring the eggs was, I still was more excited to get to the eating part. We never had a problem with too many leftover hard-boiled eggs. I would more than happily scarf them down for the days following the holiday  

I still love hard-boiled eggs. In fact, I had just made some when I was looking for a blog to feature for this week's Foodie Friday. Of course, given the seasonality of it there were multiple recipes floating around for using up those leftover Easter eggs but one really jumped out at me because it used another one of my rather new favorite foods.

You might remember in a previous Foodie Friday I tried my hand at making pimento cheese. It was a huge success and I've made it several times since. It's addicting. Terribly addicting.

Now, one use I never would have thought of on my own would be to use pimento cheese in deviled eggs. Thankfully, I didn't need to dream it up because Rachel over at Coconut & Lime took care of that  


If you haven't visited her blog before you definitely need to. She's written a whole slew of cookbooks and updates her blog frequently with a wide variety of recipes and tasty food photos.

Her recipe for pimento cheese deviled eggs is not only creative and delicious, but so easy. It's a great way to use up both leftover hard-boiled eggs and leftover pimento cheese, which I happened to have on hand. You basically just mix in the cheese along with your usual suspects of deviled egg ingredients (mayo, mustard, seasonings)  



There you go. It's done. Really, see how fast that was? In no time you have yourself some awesome deviled eggs  

p.s. I forgot the paprika until we were scarfing down the last bites and I was re-reading the recipe. Oops. Apparently I'm still more excited to get to the eating part than the decorating part.
