Foodie Friday: Big Bear's Wife

Are you bored with your breakfasts? I know poor Brent is. For ease, I usually just make fried or scrambled eggs for him. Occasionally he'll get oatmeal. On rare occasions, I'll repurpose some leftovers into something novel. But usually it's eggs (if I cook at all).
We don't eat a lot of cereal here, mostly because it a) is more carby than we usually eat, and b) requires milk, which is oddly something I don't always have on hand (whipping cream, half and half, and coconut milk creamer - yes; milk, not usually). And things like pancakes, waffles and french toast are definitely not on our every day menu.
So what does that leave to add a little variety to the morning meal?
How about yogurt?
Brent does eat yogurt as a late night snack sometimes but I don't really consider it substantial enough for a meal. One of the little cups of the low fat stuff rarely leaves me feeling like I've eaten anything (and some of them contain more bad stuff for you than sugary sweet cereal). But what if you pair a healthy yogurt with something a little heartier, like granola?
This tasty breakfast parfait comes to you from this week's featured blog: Big Bear's Wife. The blog is named after Angie's husband, who earned the nickname "Big Bear" while in the military. Her background in cooking sounds sort of like mine as when she got married she discovered she needed to learn how to cook! She started her blog in 2009 and it's evolved into a great collection recipes, crafts, and party ideas
Angie also loves parfaits and came up with a delicious combination using chocolate berry granola and vanilla yogurt that I thought would be a great breakfast idea for Brent.
I had trouble finding a granola that I thought sounded good (I would have loved to use the same kind Angie did but I didn't see anything close at our loca supermarket). I did, however, find a chocolate granola with small chocolate chunks in it. I knew my chocoholic husband would like that!
For the yogurt, I used a fat-free vanilla Greek yogurt. I like Greek yogurt because it's thicker - more substantial - than regular yogurt. I figured that'd make it a heartier choice for Brent's breakfast parfait.
It wasn't as carby as eating a whole bowl of cereal and it incorporated some calcium and protein in to his breakfast.
