A homemade version of Dunkin' Donuts' popular yeast-raised, vanilla cream filled, deep-fried doughnuts.

My new toy; a doughnut pan, combined with a new bottle of Baileys Salted Caramel Liqueur were my inspiration and while I first thought of making a coffee based cocktail with the liqueur I have to say that the resulting Baileys Salted Caramel and Espresso Baked Doughnuts are even better. Almost too good to be called breakfast, we had them for dessert!

The batter for these babies comes together in about 5 minutes with just a spoon and a bowl, basically. Couple that with the fact that they don’t require rising time means that they’re super speedy to make. I went for a pairing of wild blueberries and coconut in the batter with a simple glaze. Those juicy bursts of blueberry definitely brought the doughnuts to the next level

The dough is not as light, and they are baked, not fried, but they are so very similar to that Krispy Kreme flavor that we ate a whole batch the first time we baked these maple twisty donuts.

One big note about these donuts…that marshmallow glaze is a sticky, gooey, delightful mess. I made my kids eat their donuts with a fork, which they found to be very eye-roll inducing. But don’t be fooled, these beautiful deep-fried and golden brown lovelies aren’t as innocent as they look. The glaze is a moonshine-spiked glaze.

The base of the donut is a tart lemon cake studded with fresh lemon zest and is glazed with a bright raspberry glaze that balances tangy with sweet. They are fresh and bright – perfect for spring!

These doughnuts feel like an extra special treat because they're topped (as all things should be, really…) with browned butter glaze and chopped salted pistachios.

I used a cake donut recipe and poked a bunch of holes in said donuts and covered them in a fabulous, sugary glaze. Just like tres leches cake, you can add rum or bourbon to this glaze.
