
Fritter Batter

1 cup all-purpose flour
1/2 cup milk
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vegetable oil
2 eggs
Prepare your vegetables first (chop, sliced, or shred them as desired).
Whisk together the flour, milk, baking powder, salt, oil, and eggs until smooth.
Mix in the vegetables (or dip larger pieces of vegetables into the fritter batter).
Heat 1/2-inch of oil in a skillet over medium-high heat. Add the batter by spoonfuls, if making flat pancake-style fritters or add dipped vegetables to the skillet, and cook until browned, turning as needed.
