Ingredients: 1 can (28 ounce size) diced tomatoes, undrained 1 large onion, chopped 1 package (10 ounce size) frozen cut okra, do not thaw 1/2 cup chopped green onions 1 cup beef broth or stock 1/4 cup sherry or vermouth 2 pounds red snapper fillet, cut in chunks salt and pepper, to taste fresh thyme, for garnish
Directions: Combine the tomatoes, onion, okra, green onions, broth, and sherry in a crock pot. Mix well, then gently stir in the red snapper.
Cover the crock pot and cook on low heat for 2 hours or until the red snapper is cooked and flakey. Season to taste with salt and pepper (gently stir to mix in the spices).
Ladle the red snapper soup into individual soup bowls and garnish with fresh thyme, if desired.
