Ingredients: 1 tablespoon olive oil 2 onions, chopped 2 jalapeno peppers, seeded and finely chopped 4 cans (15 ounce size) black beans, rinsed and drained 1 can (28 ounce size) diced tomatoes, undrained 1/3 cup honey 1/3 cup packed light brown sugar 1 teaspoon ground ginger 1 teaspoon salt
Directions: In a large soup pot, heat the oil over medium heat. Add the onions and jalapeno peppers, then saute for 3 to 4 minutes, or until tender.
Add the remaining ingredients and mix well. Continue cooking over medium heat for 25 to 30 minutes, or until thickened, stirring occasionally.
