
Blue Ribbon Custard Pie

4 eggs, slightly beaten
1/4 teaspoon salt
1/2 cup sugar
3 cups milk, scalded
1 teaspoon vanilla extract
1 unbaked pie shell (9 inch size)
ground nutmeg
Preheat oven to 450 degrees F.
Mix eggs, salt and sugar in a medium bowl. Slowly stir in milk and vanilla. Pour into pie shell and sprinkle with nutmeg. Bake for 10 minutes.
Reduce heat to 325 degrees F. Bake for 30 to 40 minutes more, or until knife inserted halfway between center and edge of pie comes out clean.
Cool on rack. Store in refrigerator.
