Ingredients: 2 cans (14.5 ounce size) pitted tart red cherries in water, drained 6 cups sugar 1/3 cup freshly squeezed lemon juice 2 pouches (3 ounce size) liquid fruit pectin 1 teaspoon almond extract 1/2 teaspoon red liquid food coloring
Directions: Process cherries in a food processor until coarsely chopped.
In a heavy Dutch oven, combine cherries, sugar, and lemon juice. Stirring constantly over high heat, bring mixture to a rolling boil. Stir in liquid pectin.
Stirring constantly, bring to a rolling boil again and boil for 1 minute. Remove from heat and skim off foam. Stir in almond extract and food coloring.
Spoon jam into heat resistant jars. Cover and cool to room temperature. Store in refrigerator.
