
Fresh Apple Coffee Cake

2 cups biscuit mix
2/3 cup applesauce
1/4 cup milk
2 tablespoons sugar
2 tablespoons butter, softened
2 apples, peeled, cored, and diced
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 egg, lightly beaten
***Struesel***
1/4 cup biscuit mix
1/4 cup brown sugar
2 tablespoons cold butter
1 teaspoon ground cinnamon
1/4 cup chopped nuts, if desired
Grease a 3- to 4-quart sized crock pot.
Combine the biscuit mix, applesauce, milk, sugar, butter, apples, cinnamon, vanilla, and beaten egg in a bowl until just mixed. Pour the cake batter into the crock pot.
In another bowl, combine the biscuit mix, brown sugar, butter, and cinnamon. Stir using a fork or pastry blender until the mixture resembles coarse crumbs. Stir in the nuts. Sprinkle the mixture over the top of the cake batter.
Cover the crock pot and cook on high heat for 2-3 hours or until the cake is cooked and tests done when a toothpick inserted in the center comes out without any moist crumbs.
Let the cake cool slightly in the crock pot then scoop it out with a spoon to serve and place in individual bowls. Top with whipped topping or vanilla ice cream.
