Ingredients: 1/2 large onion, chopped 4 cloves garlic, chopped 3/4 cup bourbon whiskey, or to taste 2 cups ketchup 1/3 cup vinegar 1/4 cup Worcestershire sauce 1/2 cup brown sugar, packed 3/4 cup molasses 1/2 teaspoon black pepper 1/2 tablespoon salt 1/4 cup tomato paste 2 teaspoons liquid barbecue smoke 1/2 teaspoon Tabasco sauce, to taste
Directions: Combine the onion, garlic, and bourbon in a large saucepan over medium-high heat. Bring to a boil and cook, stirring frequently, for 10 minutes or until the onion and garlic are soft.
Add the remaining ingredients. Bring to a boil then reduce the heat to a simmer. Let cook for 20 minutes, stirring frequently, until the sauce has thickened.
Let the barbecue sauce cool then use as desired or refrigerate in an airtight container for up to 1 week.
For a smoother sauce, you can strain the sauce through a mesh sieve.
