
Almond Oatmeal Breakfast Bars

1 cup uncooked rolled oats
2/3 cup nonfat dry milk powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 dash ground allspice
1/4 cup raisins
1 cup unsweetened applesauce
3 tablespoons sugar
1 teaspoon vanilla extract
3/4 teaspoon almond extract
Preheat oven to 350 degrees F. Grease an 8x8 baking pan.
In a large bowl, combine the oats, dry milk powder, baking powder, baking soda, cinnamon, nutmeg, and allspice. Mix well then stir in the raisins.
In another bowl, combine the applesauce, sugar, vanilla extract, and almond extract. Mix well then stir the applesauce mixture into the oat mixture. Just mix until the ingredients are moistened.
Transfer the batter to the greased baking pan. Place in the oven and bake at 350 degrees F for 30 minutes or until the top is lightly browned.
Remove the pan to a rack to cool then cut into bars. Store the bars in an airtight container.
