Arizona Cafe & Grill Barbecue Sauce

Serves/Makes: 1.5 quarts    |   Ready In: 30-60 minutes

Ingredients:
8 ounces unsalted butter
1/2 medium red onion, finely diced
3 cloves garlic, finely diced
20 medium tomatoes, seeded and diced
1/2 cup hoisin sauce
1 pound molasses
1/2 tablespoon cayenne pepper
1/2 tablespoon ancho chile powder
1/2 tablespoon pasilla chile powder
1 ounce Worcestershire sauce

Directions:
Melt the butter in a large saucepan or Dutch oven over medium heat. Add the onion and garlic and cook, stirring frequently, until the vegetable are soft.

Add the tomatoes to the pan and mix well. Bring the mixture to a boil then reduce the heat to a low simmer for 10 minutes, stirring frequently.

Add the hoisin sauce, molasses, cayenne, ancho chile powder, pasilla chile powder, and Worcestershire sauce to the pan. Mix well. Let the barbecue sauce simmer for 30 minutes.

Remove the pan from the heat and let the mixture cool slightly. Transfer the sauce to a food processor or blender and puree until smooth.

Store the barbecue sauce in an airtight container in the refrigerator for up to 1 month.
