Ingredients: 1 block (16 ounce size) soft tofu, drained 4 tablespoons cocoa powder 1 teaspoon vanilla extract 1/2 cup sugar 2/3 cup chocolate soy milk 1 prepared graham cracker crust
Directions: Preheat the oven to 375 degrees F.
Place the tofu in a large mixing bowl with the cocoa powder, vanilla extract, and sugar. Beat on medium speed with an electric mixer until well combined. With the mixer running, slowly add the soy milk until combined.
The filling can be prepared up to this point and be refrigerated for up to 12 hours.
Pour the chocolate filling into the graham cracker crust. Place the cheesecake in the oven and bake at 375 degrees F for 25-35 minutes, or until the cheesecake is set.
Turn off the oven and let the cheesecake cool in the oven for 10 minutes then remove to a wire rack. Let cool completely then refrigerate for 1-2 hours to chill before serving.
