Ingredients: 1 large ripe banana, peeled 2 large eggs 1/2 cup milk 1/2 teaspoon ground cinnamon 4 slices sturdy bread 1 1/2 tablespoon butter 1/2 cup maple syrup, heated
Directions: Combine the banana, eggs, milk, and cinnamon in a food processor and process until smooth. Transfer the batter to a 9x13-inch shallow baking dish.
Place the slices of bread in the batter in a single layer. Let the bread soak in the batter for 20 minutes, turning occasionally, until all the liquid has been absorbed.
Melt the butter in a large skillet over medium heat. When hot, add the soaked bread slices and cook for 3 minutes per side or until golden brown.
Serve the banana cinnamon French toast immediately with heated maple syrup, if desired.
