
African Fish Curry Powder

1/2 pound dry red chiles
1/2 pound coriander seeds
2 ounces cumin seeds
1 ounce ground turmeric
1 ounce mustard seeds
Combine all the spices in a spice grinder and process until it is a fine powder. Store in an airtight container for up to 6 months.
Use 2 teaspoons for every pound of fish.
